  1. Preheat the oven to 350 degrees.
  2. Remove the neck and giblets from the turkey, transfer it to a roasting pan with a grill, and let stand at room temperature for an hour.
  3. In a small bowl, combine 1 1/2 sticks of butter, lemon zest, thyme, rosemary and 1/2 teaspoon of poultry seasoning until well combined.
  4. Pat the skin of the turkey with paper towels to remove any moisture.
  5. Use your fingers to carefully separate the skin from the turkey and rub 1/3 of the butter mixture under the skin, being careful not to tear it.
