Giada De Laurentiis’ Italian Chocolate Cake Deserves A Place On Your Holiday Menu

Described as a ‘quintessential dessert’ in Capri by De Laurentiis, torta caprese is a traditional Italian cake made with chocolate and almond flour. It’s a simple recipe, really, that requires very few ingredients: chocolate, butter, eggs, sugar, and the aforementioned almond flour and chocolate. De Laurnetiis’ recipe, in particular, requires 63% sweet and sour chocolate chips, unsalted butter, and extra pure vanilla, as well as icing sugar for the dusting.

To make De Laurentiis torta caprese, melt your chocolate with butter in a double grill. If you don’t have one already, they’re easy to find or assemble. You can either buy one, like the Double Grill from Farberware.

Then, mix your egg whites with the caster sugar, then the egg yolks. Then, incorporate the chocolate mixture, the almond flour and the vanilla. Stir in your whipped whites and pour the mixture into a 9 inch springform pan. Bake for about 40 minutes.

“Wait for it to cool completely before dusting the top with powdered sugar,” advises De Laurentiis. “You can cover with cocoa powder if you want, or you can snow it… with a little powdered sugar. I will say this, Jade prefers powdered sugar over powdered cocoa which is why we make powdered sugar.

“Do it for any holiday gathering – it will be a quick favorite,” writes De Laurentiis.
