Best Chocolate Polka Dot Cake Recipe

Straight out of mom’s cookbook, this family recipe is the cake of my youth. It combines a sheet of fudge chocolate cake with dots of cheesecake and crunchy chocolate chips for texture. Got it at a party long before my time, my mom told me she tried it and all she needed was the recipe. Other than that, its origins are unknown. For its light, soft and melting texture, the chocolate cake does not contain eggs. Instead, it rises beautifully simply by activating baking soda with white vinegar.

The cake serves 12 people, so it’s perfect for birthday parties and casual dinner parties. Be sure to cool the cake completely before serving; otherwise, the cheesecake filling will not set.

  1. Preheat the oven to 350º. Grease a 13-by-9-inch pan with cooking spray.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, salt and 1 1/2 cups granulated sugar. Whisk together water, oil, vinegar and vanilla until well blended. Scrape the batter into the pan and spread it into an even layer.
  3. In a medium bowl, whisk egg, cream cheese and remaining 1/4 cup granulated sugar until smooth and well blended. Stir in fries. Drop a dollop of cheesecake batter over the chocolate batter to create a polka dot effect.
  4. Bake until a toothpick inserted in the center comes out clean, 35 to 40 minutes. Let cool in pan on wire rack. Slice and serve.
